Personally, I blame the frozen spinach. I think there was too much of it and it sucked up all the moisture. The last time I made this it was much creamier, but I also used fresh baby spinach. I also ran out of white wine so I used chicken stock instead. The flavor was definitely compromised. This was not a stellar preparation of this dish.

Ricotta Pasta with Spinach
I'm not sure what happened here...

ReplyDeleteMelissa - I'm becoming disillusioned by frozen spinach these days. Maybe it's the brand but it just seems so dry...I do love spinach, though. :)
