I shredded some cheddar cheese and minced a scallion for the filling. I crisped up the tortilla on my griddle and then sandwiched in the cheese and scallion. After the cheese melted I cut it into 4 triangles and served it with a dollop of sour cream, fresh chopped cilantro and some diced grape tomatoes.
I love this photo - the colours of the red tomatoes and the white cream are just so beautiful together! Looks like a delicious lunch. :)
