Last night I made chicken fajitas with all the fixings:
... including chicken cooked with a little lemon and lime juice (not grilled, unfortunately...SP got home too late and we're low on charcoal):
... slow-cooked peppers and onions:
... guacamole:
... shredded cheddar cheese:
... and chopped tomatoes:
I also made the Spanish rice recipe I got from Melissa:
Even though the chicken wasn't grilled, this was still a fantastic meal.

ReplyDeleteEven better though, on Sunday I made chorizo and eggs for brunch, added the homemade beans I made with the burritos and had leftover rice on the side with avocado on top. Hm, I wonder where I got that idea. :P

Melissa - Hehe. I love when we do that! :) Mmmm...chorizo and eggs with beans, rice and avocado!? Yum! I have some leftover rice and I'm toying with the idea of picking up an avocado on my way home from work so I can have it with eggs for tomorrow's breakfast.
Grill while we still can? What's happening...is the grill going off to college or something?
