Fried Rice
We had some rice leftover from the tinga and some vegetables leftover from Thanksgiving so I decided to experiment with fried rice:

I chopped onion, roasted carrots and green beans, cooked them in a skillet and then added the rice. Once the rice was toasted a bit I added two beaten eggs and some soy sauce and a dash of sesame oil.
