I've redeemed myself!!
Last night I made Nigella's Spaghetti Carbonara, a recipe I absolutely loved the first time I made it and royally screwed up the second time. I was extra careful, again babysitting the onions and bacon to make sure they were perfectly cooked and even going so far as to lay out a towel next to the egg/heavy cream/cheese/nutmeg/salt and pepper mixture that would become the sauce so I wouldn't forget to take it off the heat. The result was picture perfect:
Luscious, creamy sauce coated every strand of pasta, mingling with the bacon and onions made syrupy by the reduced white wine. Everything worked in perfect harmony. I had redeemed myself and it tasted glorious.
I made Nigella's Spaghetti Carbonara last night too! Unfortunately, mine did not turn out as "creamy" and smooth as your did. I left it on the burner while trying to stir. It tasted excellent though! Oh well, the hubby and I liked it and I will try again in another week or so.

Jessy - Yes!! That's the problem I had the second time I made it. I had a brain fart and forgot to remove it from the heat. You have to, have to, HAVE TO remove it from the heat. Take the pan clear to the other side of the kitchen. The result will be creamy and smooth. Much, much better!

I'm so glad you made this again so soon and redeemed yourself! :D I really want it now. it will have to wait until next week, but I am definitely going to make one before I leave for the holidays.

ReplyDeleteDadCooks - The key is taking it off the heat. You have to remember that crucial step, otherwise your dish will look like mine did the last time I made it. I promise you it will be perfectly creamy and gorgeous if you remove the pan from the stove before mixing in the eggs, cream and cheese mixture.

Katie - LOL! Trust me, I know the feeling. I knew it would work out fine since I'd made it successfully once before. It was my own stupid fault for not taking it off the heat before mixing in the sauce ingredients.
ReplyDeletegoing to dallas for 11 days to see my mom and all of steve's family. we skipped a private vacation this year (I mean, I had it reserved and literally canceled it) so that we could spend a lot on the move. so I need this break. badly. I'm already planning on taking lots of pictures this year - of people AND food. :)

ReplyDeleteMelissa - That sounds nice. 11 days is a good vacation. I'm sorry you had to cancel your private vacation...I know how important that time away can be. It's been forever since we've taken a real vacation (not visiting family) so I'm really dying for one as well. I can't wait to see your pictures. :)
