This morning I made us a quick breakfast of scrambled eggs served with salsa and slices of avocado:

I do love eggs and avocado together. If only I'd had some of that excellent Spanish rice to serve with this meal.

  2. I LOOOVe my eggs with some chunky salsa. I never thought of adding avocados. I'm totally doing this. Thanks!

  3. Melissa - When I start cooking again I'm going to make that rice with the avocado enchiladas. That way I'll have food for breakfasts. Yum!

    Katie - Avocados add that nice creamy, buttery goodness to the breakfast. :)
