Peaches with Vanilla Ice Cream

I bought a basket of peaches at the farmer's market just so we could have peaches with vanilla ice cream:


I peeled and diced a few peaches before cooking them with butter, brown sugar and OJ. Once the sauce got nice and thick I poured it over scoops of creamy ice cream. Delicious and so summery.

    Geoff J - My husband suggested grilled but since we have a charcoal grill I'd be worried about controlling the heat. It's definitely on my list to try, though.

  4. You could cheat and try it on a Foreman Grill :/

    Since peaches are so delicate all you're really going for is a nice char for flavor and presentation - so higher heat might actually work better. Or you could try a white peach they are ready-to-eat when crunchy so they'll hold up on the grill a little better.
