I love when everything works out so that I can spend my Sunday afternoons cooking and prepping for the week. I haven't had a Sunday like that in a long time so when I realized this Sunday would be one of those days, I was very happy.
In addition to slicing mushrooms, chopping onions and breaking down chicken breasts into chicken fingers, I baked some turkey meatballs for a dish later in the week:
... and since the oven was on for the turkey meatballs, I thought I'd bake some cupcakes for SP. He's been craving them recently and since I usually eat most of them before he has a chance to enjoy any, I thought I'd make a batch especially for him:
... These are chocolate cake with vanilla frosting. Since I prefer vanilla cake with chocolate frosting, I think SP has a good chance at getting his fair share.
Mmmm, I love meatballs. I want to try making meatballs using Alton Brown's trick in Good Eats, using a mini muffin pan to hold the meatballs while baking. He also makes Swedish meatballs in a delicious looking gravy. I'm looking forward to seeing how you serve up your turkey meatballs.
ReplyDeleteI made mini meatloaves awhile back using that trick with the muffin pan. It worked really well - the outside got crusty and the inside stayed nice and moist.
