I love making a hearty Sunday breakfast. These days I've been into scrambled eggs, breakfast potatoes and sausage:
This time I chopped parsley and scallions to mix with the potatoes and onions. It's an Ina Garten recipe and I find the freshness from the parsley and the fresh, mild onion taste from the scallions goes perfectly with the soft potatoes and sweet, mellow onions.
Looks yummy! I am not much of a morning cook but I love breakfast for dinner!
