Crispy Yogurt Chicken, Crash Hot Potatoes and Broccoli

The last time I made the Pioneer Woman's Crispy Yogurt Chicken and Crash Hot Potatoes the chicken wasn't very crispy. This time I used bone-in, skin-on chicken breasts and the results were much better:


I marinated the chicken overnight in the yogurt mixture made with lemon juice and zest, fresh chopped rosemary, thyme, parsley and garlic. The chicken really soaked up the flavors and I was able to use less yogurt in the final step, which helped keep the coating crispy:


Unfortunately I ran out of panko, so there wasn't enough coating, but it was still good. Next time I'll have more panko on hand. The potatoes were also fantastic, as always:


Nice and crispy, with great flavor from the rosemary, thyme and scallions. I served the meal with simple steamed broccoli.
