Crispy Parmesan Chicken, Boiled Potatoes and Peas

I needed a quick dinner before heading to the store so I threw together an old favorite with a slight twist:


Instead of pork chops coated in egg and bread crumbs mixed with grated cheese, I used chicken breasts. They were so moist and flavorful, with a nice cheesy bite. I love boiled potatoes tossed with butter and parsley so I decided to toss in some peas instead of having them as a separate side dish. It was a great combination.

On a side note, I'm really loving these C&W frozen peas. Ever since Alosha turned me on to them I've been buying them instead of the supermarket brand. This might sound silly, but they actually taste like peas. I'll gladly spend the extra money if it means I get a good product.

  2. doesn't sound silly to me. obviously. ;) thanks. I would love to do fresh peas, but it's very difficult, even with the resources around me. even a lot of expert chefs I've read tell you that it's hard to do peas fresh. so c&w does the trick *beautifully*. they're great, aren't they?? :)

    I remember you talking about chicken parmesan, and college, so long ago. glad to see you're still doing it. I need to perfect your pan-fried thing for the sake of pork chops though, seriously. I can never quite get that. urgh. ;P

  3. I love to make chicken this way. I call it "Saganaki Chicken" because of the melty, crispy crust. I haven't made it with plain breadcrumb since!

    And my comfort food request as a kid was always those parsley-ed potatoes. My dad made them for me when I was sick! I will have to try them with the peas. A little more nutrition...
