I stumbled upon The Pioneer Woman awhile ago, but I haven't gotten around to making any of her delicious-looking recipes. I thought Pioneer Woman Chicken Spaghetti would be a good recipe to make ahead of time. I put it together last night to have for dinner today.
It isn't often that this happens, but SP wasn't a fan of this dish. I really liked it (you can't go wrong in my book with a creamy, cheesy pasta dish), but he didn't like the fact that the green pepper and onion were basically raw and crunchy. And I don't think he liked the overall flavor either. Disappointing, since I thought it was so good I had seconds.
I actually had the same complaint at SP when I made this, but the rest of it was so good that I've made it a regular meal in my house. I now chop the onion and pepper really small and we hardly notice them.
ReplyDeleteAmanda - Thanks for letting me know. I might sneak it back into the rotation with some changes (maybe cook the green pepper and onion ahead of time) so I can leave the pieces on the larger size. :)
ReplyDeleteSame thing here. I didn't like the crunchy veggies when I made it the first time, so I now always saute first.
ReplyDeleteWe love chicken spagetti @ our house. And since there are just the 2 of us now, I always have enough to put several casseroles of it in the freezer for the nights when I don't feel like cooking.
Snooty - Good to know. I'll definitely try it again but saute the veggies.
ReplyDeleteIt's always disappointing when you make something new and you love it but your partner doesn't! Hopefully he'll like it with the capsicum and onions sauted.
ReplyDeleteits been said but i will re-say it: my husband hates crunchy veggies of any sort, so i also saute before putting veggies into casseroles.

ReplyDeletedeLa - I don't know why I didn't think of it when I was assembling the casserole. Probably because it was 11pm and I was tired (yes, I made a casserole at 11pm).
yeah too bad about SP - the other gals' suggestions were good though, to get him to try it again.

I've seen this recipe (of course, since I've read her cooking blog since day 1) but you want to know what you should try? her best.lasagna.EVER. because it IS. it really is (even though I did tweak it a few different ways). I have a post coming up about it.
my grandmother used to make this for us and i really like it... hubby can't stand it. i still make it on occasion to have for my lunches :-)
