On Saturday I used ground beef to make taco filling, but I ultimately felt like eating a gooey, cheesy quesadilla so I put the meat and cheese inside the two tortillas and fried them up:

I served it with a dollop of sour cream, a handful of chopped romaine, a sprinkling of chopped cilantro, some taco sauce and grape tomatoes from my garden.
