Enchiladas
Some of you may remember that SP's mom makes enchiladas every year to give away as Christmas presents. We needed a quick dinner last night so I popped the pan in the oven (still frozen since we hadn't planned ahead) and they heated through for about 45 minutes until SP got home.

I had mine with sour cream and salsa.

I've never heard of enchiladas as Christmas presents - but that's definitely a present that will come in handy one dinner time! :)

Katie - She freezes them and gives them out. It takes a lot to make them (she makes the tortillas from scratch) so she only does them once a year. But yes, they really came in handy!
ReplyDeleteI've been craving Mexican food lately, too. I had it for New Year's Eve and again for my birthday on Saturday. Yum!
Enchiadas look delicious i cook them at least once a month, Do u eat your with a side dish or by them selfs? I know a couple of great side dish to go great with them ,beans and rice and a salad goes great.
