I used chicken breasts this time. I was never a fan of dark meat, but the thighs are so cheap I figured I could live with it. Once we went through the family pack from the wholesale club I decided it was back to breasts. I really enjoyed the flavors from the shallots, thyme and balsamic. Definitely a winner.

Balsamic Chicken with Mushrooms
SP was a huge fan of this meal the last time I made it and it didn't disappoint last night either:

Aaw man, if i could only get C to eat mushrooms and orzo...or is that rice...I guess either would work. :(
ReplyDeleteThis looks good! I just added it to my list of recipes to try.
ReplyDeletelonghair - Aww...that stinks that C doesn't like mushrooms or orzo. Orzo is just tiny, rice-shaped pasta.
ReplyDeletePsychgrad - It's a fantastic recipe! If you try it, please let me know how it turns out.
This looks soo good! I must try this!
ReplyDeleteI know what orzo is...just looked at the picture quick, C does like rice, so I may give that a try. I love orzo especially if you cook it in some chicken stock or even make something similar to a risotto with it. Calories...mmmmmmmmm
ReplyDeleteWhere is the original recipe?? It looks fabulous!
ReplyDeleteJulie - At the top of the post is a link to the first post I did on this meal, which contains the link to the blog where I got the recipe. :)
ReplyDeleteI definitely cook orzo in chicken broth, when making it as a side. yum.
ReplyDeleteI loved this mushroom chicken of yours last time and still have it in mind. speaking of chicken thighs, I am using that for making the skillet chicken, broccoli, ziti thing you posted. I'll let you know how it turns out!
Melissa - That skillet chicken and broccoli dish is pretty popular. :) I hope it works out for you guys!
ReplyDeleteI actually didn't make it until last night cause I had a fever on thursday (been really sick on and off). but steve LOVED it! yay, a winner!! :D
