SP was a huge fan of this meal the last time I made it and it didn't disappoint last night either:
I used chicken breasts this time. I was never a fan of dark meat, but the thighs are so cheap I figured I could live with it. Once we went through the family pack from the wholesale club I decided it was back to breasts. I really enjoyed the flavors from the shallots, thyme and balsamic. Definitely a winner.
Aaw man, if i could only get C to eat mushrooms and orzo...or is that rice...I guess either would work. :(

ReplyDeleteI know what orzo is...just looked at the picture quick, C does like rice, so I may give that a try. I love orzo especially if you cook it in some chicken stock or even make something similar to a risotto with it. Calories...mmmmmmmmm

ReplyDeleteI loved this mushroom chicken of yours last time and still have it in mind. speaking of chicken thighs, I am using that for making the skillet chicken, broccoli, ziti thing you posted. I'll let you know how it turns out!
