Roast Beef, Au Gratin Potatoes, Roasted Broccoli

The last time I tried making roast beef, it didn't go very well. We both had off on Monday, so we thought we'd make a nice dinner to celebrate my successful conference. Despite my previous failure, I decided to give roast beef another go.

I used the same recipe and this time it worked out quite well, due in large part to the cut of beef. I was able to find a top sirloin roast and although I couldn't marinate it overnight, it had excellent flavor. The only thing I'd do differently next time is cook it for a shorter amount of time. This was bordering on medium, too done for our tastes.

We absolutely love these au gratin potatoes:

The recipe says it makes 6 servings, but it barely makes 4 in our house. We could probably eat the whole pan of these in one sitting if left to our own devices. It's so simple to make but it tastes absolutely fantastic. I roasted some broccoli to go along with the roast and potatoes:

This time I tried adding some garlic powder to the chili powder, salt and pepper and it was not a success. The flavor of the garlic powder just didn't work the way fresh garlic does. Lesson learned.

  2. The scalloped potatoes look great. Still haven't made them.

And the beef looks wonderful too, though if it was on the verge of medium, I guess I would want it pinker too.

Congratulations again on your success with work. Especially while you were in pain.

  3. Amanda - Thanks! I hope you like it!

Melissa - The potatoes are truly sensational. I was thinking of making another batch this weekend. Would that be wrong? :P

And thank you! I'm glad the conference is over. It was a lot of work, but it was very rewarding seeing it all come together.

  6. Colleen - These potatoes are amazing! If you make them I know you won't be disappointed. :)

longhair - Definitely not the camera. We like our meat red/pink so this was too done for us. :) I'm feeling OK...no more pain.

I heard you were going to be in our neck of the woods this weekend. What gives? You don't want to see us?

  7. Wedding...I would love to see you guys but with C's parent's being in town and staying with her brother, there's barely enough time :(

Trust me, we really want to see you two :) I'm making me sad...thanks!

Besides it's your turn to come down here ;)

  8. longhair - Probably for the best anyway seeing as it's our anniversary weekend. Not that we're doing anything fun since we're both sick. We had all these great plans...
