Tex-Mex Beef Enchiladas

Last night I made the same Tex-Mex Beef Enchiladas that I made for Cinco de Mayo:


... but as you can see from my plate, they didn't hold together like they did last time:


They still tasted fantastic but, as SP has told me countless times, he isn't a fan of corn tortillas. I need to find a good recipe for enchiladas using flour tortillas, if one even exists.

  1. Hi - I got to your blog in a roundabout way. Anyway, saw you are looking for an enchilada recipe. Don't know if you are a fan of chicken, but there is a super easy and yummy recipe on the Old El Pase Green Enchilada Sauce can. I do a baked chicken for my husband and I, and then pull off the rest of the meat in strips and freeze it in ziplocs for recipes such as this - makes the preparation a breeze! I'm not a big fan of peppers or chilis, but I love this recipe (and it does use flour tortillas)!

  3. I hear ya on the tortilla issue (hubby's issue, of course, not mine) and you can find many enchilada recipes on allrecipes.com that use flour. that's where I've gotten both my recipes from and they come out pretty darn great.

  4. alosha - Do you have a recipe in particular that you like? I saw a few for chicken enchiladas that sounded good, but they used cream of something soup and I'm not a fan. I'll check out allrecipes.com for some ideas. :)
