Spaghetti and Meatballs

My mother-in-law's birthday was yesterday and when we invited her over for dinner to celebrate she asked that I make spaghetti and meatballs with garlic bread. So that's what I did.




I decided we needed a vegetable other than parsley in the meal so I made a grilled vegetable salad:


... using produce from my parent's vegetable box. I marinated green peppers, eggplant, yellow squash and zucchini in a dressing made with shallots, rosemary, red wine vinegar and olive oil and then grilled them. Once they were cooked I cut them into bite-size pieces and tossed them with the remainder of the dressing.

  2. That looks fabulous. Love the Italian food... Now how did you come up with that marinade? It sounds like you mostly pull this stuff out of your head. Wish I could do that! :)

    Jojo - I do make up a lot of recipes off the top of my head. It took me a long time to be able to do that well. I think it comes with cooking a lot and knowing what goes well together through the trial and error of cooking from recipes.

  5. a witt - you know what's funny, I was talking to my husband about how when I make a pasta dish for just us I make a pound of pasta and it never seems to go very far. But yet when I make a pasta dish for guests that pound of pasta always seems to stretch farther. We had four people who all took seconds (and sometimes thirds) and yet we still had leftovers! I think it's because we also had the garlic bread and veggies, but still. I'm always amazed.

  6. That looks like a wonderful meal. I love spag and meatballs... I think we have spag bog more often because it's quicker (no time needed to make meatballs).

  7. tfp - that's what makes this a good lazy Sunday meal. I can cook the sauce all day, make the meatballs early in the morning and then just fry them up and finish cooking them in the sauce right before we eat.

  8. mmmm! I must make that this week- I use half pork half beef in mine. Do you put parmesan in the meatballs too?

    I have a tip for you: Bake the meatballs- then you don't have to stand around fliping them in a pan, and they cook more evenly.

    of course, the oven in the summer isn't always nice..

    Your marinated veggies look awesome too. Just YUM.

  9. C - I always put some Parmesan cheese in my meatballs. They taste so good that way.
