Chicken, Mashed Potatoes and Broccoli

Comfort food is a very good thing. Tonight I made chicken, mashed potatoes and broccoli. Homey and delicious.



I cut the chicken breasts into tenders, dipped them in beaten egg and then dredged them in a mixture of Italian seasoned bread crumbs and Pecorino cheese. I gave them a quick saute in a skillet over medium-high heat. They took about 2 minutes per side.

For the mashed potatoes I finally tried The Food Pornographer's recipe for garlic mashed potatoes. Her partner adds a clove of garlic to the potatoes while they're cooking and then mashes the potatoes and garlic together. One word - yum! I added two crushed cloves because we really like garlic. Once the potatoes were tender, I mashed them with some milk, leftover heavy cream from last night's fettucine alfredo, salt, pepper and butter. I think this is my new favorite way to make mashed potatoes.

The broccoli I just steamed and then tossed with butter, salt and pepper.

  2. What I really wanted to make was chicken fingers and fries, but we're completely out of vegetable oil and I was too hungry to stop at the store. I've been craving chicken fingers ever since you wrote about the ones you made with the cereal coating. Mmm....honey mustard dipping sauce....those are definitely on next week's menu!

  3. You MUST try those chicken fingers. I've made them twice now and they are DELISH.

    Last night we had sticky chicken. I forgot how good it was. I'm enjoying the leftovers today!

    So next week I am making my first ever PIZZA!

    I did not buy bread flour though. Does it make that much difference? If so I figured I could borrow what I needed from my mom.

    Can't wait except Ams will not be home and that will suck. She's going to Jersey to see the twins and her cousin Christie.

  4. I'm not making the fingers with Captain Crunch. Neither of us like the cereal so I can't justify buying a whole box. I'll probably use the same batter recipe I use for my onion rings.

    Yay! It sounds like you're making your own pizza dough. I don't make my own dough; I just buy some premade dough from the Italian bakery. But the few times we did make our own dough we just used regular flour and it was perfectly fine. I can't wait to hear how it turns out!

    Ack! She'll be in Jersey? You'll have to email me and tell me where her family lives...one day we're going to have to get together.

  5. That's what's nice about having a kid - she ate the Cap'n Crunch - LOL! Then I had to buy another box when I made it again so I told her hands off and I'll just use it for my chicken. Fortunately the box is very tiny. Lucked out there I think, usually cereal boxes are huge.

    Yes, I am making my own crust and my own sauce! I'm VERY excited.

    It's the twins 5th birthday and her cousin is about to give birth to her second son so she's going out to see her while she's there too. She honestly won't have any other time since she's only going for a long weekend which is why I didn't tell you she was going earlier. Plus she can't meet you without me!!!!

    Oh I didn't think she'd have time to see me this visit...I just hope someday we can all meet up, either on my coast or your's. We've always wanted to visit Seattle. :)
