Philly Cheesesteak Sloppy Joes

Living near Philadelphia, we are big fans of cheesesteaks. Many restaurants near us make their own cheesesteaks and, of course, there are the popular restaurants in the city itself. SP even made his own version recently. So when I saw this recipe for Philly Cheesesteak Sloppy Joes on Kelly's blog, I had to give it a try.


These couldn't have been easier and the results were delicious. I added some green pepper for color and flavor and I think mushrooms would also be good. We only had two tablespoons of steak sauce left in the bottle, but that ended up being plenty. The cheese sauce is a great addition and made these taste like the cheesesteaks we know and love. I hollowed out the rolls to make a little bed for the meat mixture to sit in, which really helped keep everything together. I'll be making these again for sure.

UPDATE: I've remade these quite a few times and tweaked the recipe, decreasing the amount of broth and making some changes, like melting provolone instead of making the cheese sauce and omitting the green pepper (I'm not really a fan). Two of my favorite ways to serve these are with Cheez Wiz and as a cheesesteak hoagie with shredded lettuce, sliced tomato and sliced raw onion with a smear of mayo mixed with red wine vinegar and a dash of oregano.

Philly Cheesesteak Sloppy Joes
Adapted from Rachael Ray

1 tablespoon olive oil
1 softball-sized onion, chopped
1 green pepper, chopped (optional)
1 pound ground beef
2 tablespoons steak sauce, such as A-1
1/2 cup beef stock
Salt and ground black pepper
4 dinner rolls
Cheese sauce (see below) or sliced provolone or Cheez Wiz
Optional toppings: shredded Romaine, sliced tomato, sliced raw white onion, 4 tablespoons mayo mixed with a splash of red wine vinegar and a shake of oregano

Cheese sauce:
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone, shredded

In large skillet over medium-high heat add the oil. Add the onion and green pepper and cook until soft and starting to brown. Add the ground beef and cook about 5-6 minutes. Drain off the fat, then stir in the steak sauce and beef stock, season with salt and pepper, bring to a boil and cook about 2 minutes.

Toast the rolls and set aside.

If making the cheese sauce, melt the butter in a medium-size pot over medium-high heat. Stir in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and let thicken, about 2 minutes. Turn off heat and stir in the cheese.

To serve, place a scoopful of the meat mixture onto the bottom of the rolls, then top with the cheese sauce and replace the top of the roll. If serving as a cheesesteak hoagie, spread the mayo mixture on the top bun and add lettuce, tomato and raw onion on top of the meat.

  15. This was so good, even my picky eaters loved it! My cheese sauce didn't thicken, so I just put a slice of provolone on each sandwich. I used toasted hamburger buns. Thanks for sharing!

  27. Just finished eating them...YUM! I used ground turkey and simmered longer and just regular hamburger buns, toasted. Less milk for thicker sauce and an Italian blend cheese. It'd be good with mushrooms added...

I am using your filling and making a hamburger-helper-ish style pasta dish with it by doubling the amount of beef broth and A-1, adding an extra cup of water, and cooking about 8 oz of rotini pasta in it. I have made the sandwiches with it before and they were SO GOOD. Can't wait to see how the pasta turns out!

  35. Do you drain the beef after cooking before adding the onions & peppers? Making this tonight for the first time & the kids are looking forward to it! To tell you the truth, so am I!

    1. I'm sorry I didn't respond right away. I don't usually drain the beef because it's too complicated and usually makes another dish for me to wash. We use low-fat ground beef (90/10) so there isn't much fat. I hope you enjoyed these!

  38. I made this tonight and we really liked it. I drained the grease off b4 adding the broth. Then I had to drain some of the broth off of the meat b4 serving. I made it on sliders too but I'm thinking next time I will serve it on toasted hotdog buns , open-faced with sauteed mushrooms on top. This is a keeper!

  39. We love these!!! Instead of the cheese sauce I just put a piece of Provolone cheese on top of the meat then add just a touch more meat. The cheese melts in between the meaty layers. SO DANG GOOD! Thanks for sharing!

  44. This recipe sounds delicious and I definitely will try it. But, being born and raised in Philly, I just do not see where the green pepper comes into play. I have never seen green peppers offered on a cheese steak anywhere here, only in places outside of Philly. I am not saying that people may not ask for it, but it is definitely not standard fare.

    1. That's the beauty of cooking at home - you can add or leave out whatever you want. I live in the 'burbs and it's always an option out here. Might not be standard but it's something people enjoy.

  48. I made this tonight and it was fabulous! I added mushrooms, as well as the peppers and onions. I served it open-faced on a plate and smothered with smoked provolone and pepperjack cheeses. Definitely going to be a regular "turn to" recipe for quick meals and potlucks at work! Thanks for the recipe!

My 9 yr old has Aspergers and is very, VErY picky and caution with what he eats, rarely has more than 3 bites for any meal.............he ate a whole bunfull, THEN ASKED FOR ANOTHER!!! I cried tears of joy when making his second one. So glad i have found this blog!!! :-)

  53. I made this tonight with a few changes. I didn't have steak sauce so I used worcestershire, and I added 2 Tbsp of ketchup. I at least doubled the beef broth, then thickened it with cornstarch to a nice gravy consistency. I also added some garlic and onion salt instead of regular salt. I served it open face with sliced cheese on the bread, instead of making cheese sauce. My family loved it.

  54. I was out of steak sauce so I added a touch of Worcestershire & BBQ sauce which worked out great. My family loved them. I wasn't crazy about the cheese sauce though, so next time I think I will just use a slice of provelone. But it was a hit at my house

  56. Not bad, doesnt taste like a philly though. Next time i'll do without the cheese sauce and just melt provolone on top in the broiler. good flavor but tastes more like a meaty 'joe (because of the A1)

  57. Found this recipe per Pinterest and made it tonight. It was GREAT... my whole family loved it. As others have done, I did use a dark beer (1/2 Modelo Negro and 1/2 beef broth for the liquid part), and used butter toasted hamburger buns, but otherwise stuck to your recipe. It will most certainly go into my recipe box. Thanks for sharing!

  61. Your Kidding, RIGHT? I'm sure they taste great, however, a cheesrsteak is a very special thing. Groundbeef and Philly Cheesesteak should NEVER be used in the same recipe. I will try this because it sounds great, but I will NEVER call it Philly cheesesteak sloppy joe.

  67. I just made these for lunch for my husband, and they were so easy and delicious! I sprinkled montreal steak seasoning onto the meat mixture, substituted American cheese for provolone and added in jarred jalapenos for extra spice. I then mixed the cheese sauce in with the meat mixture. Thanks for the recipe!

  72. I made this for the first time tonight (I found it on pinterest). I have picky eaters who hate sloppy joes so I was totally prepared for them to hate it. They (7 and 8 year olds) went back for seconds and a friend that was staying the night had 3! The only thing I changed was I sauteed the onions and bell peppers first and then kept them on the side so they wouldn't be in the kids sandwiches.

  73. I made these for dinner tonight after finding it on pinterest. My 7 and 8 year olds hate sloppy joes. They had seconds and a friend sleeping over had 3 or 4. They were a big hit.

    The only thing I did different was I sauteed the onions and bell peppers first so they could be on the side and not in the kids sandwiches.

    1. I'd make the same amount of filling regardless of the size of the rolls. You'll just get more sandwiches with smaller rolls. These are regular sandwich rolls in the picture above, maybe even a larger than normal roll.

Made these and served em with beer battered fries and they were a BIG hit!!! ...hubby suggested possibly using cubed "stew meat" instead of ground beef to make it a bit less messy...ill try it and post an update as to if it keeps the same great flavor :) Thanks so much for posting the recipe, it hit my craving right on the spot!!!

  81. We thought these were great! Yes, nothing like a REAL cheesesteak but were you really expecting them to be? My two picky girls loved them. Provolone is difficult to find here in the UK so I just shredded cheddar on the top instead of making a sauce. Definitely keeping this recipe!
