It couldn't be simpler - Cook some ground beef and chopped onion in a skillet until the beef is no longer pink. Add 2 teaspoons cumin, 2 teaspoons chili powder, 1 clove of minced garlic, salt, pepper and 2 tablespoons tomato paste to the beef mixture and cook for maybe 3 minutes. Adjust the seasonings to taste. <BR/><BR/>C Laz - It was mighty tasty! Here's the recipe to the best of my memory:<BR/><BR/>2 cans of Ro-Tel tomatoes (drained, 1/2 cup of juice reserved)<BR/>1 can refried beans<BR/>1 tablespoon hot sauce<BR/>1/4 cup chopped cilantro<BR/>3 cups shredded cheddar cheese<BR/>12 taco shells<BR/>1 pound ground beef<BR/>1 packet taco seasoning mix (or see my recipe above)<BR/><BR/>Preheat oven to 475 degrees. Mix 1 can tomatoes, refried beans, hot sauce and cilantro in a bowl. Spread evenly over bottom of 9 x 13 baking dish. Top with one cup of cheese.<BR/><BR/>Cook ground beef in a skillet until no longer pink. Drain off any fat and add taco seasoning. Fill each taco shell with some cheese and beef. Place in bean mixture so standing upright. Once all shells are filled cover the pan with tinfoil and bake for 10 minutes. Remove foil and bake another 5 minutes.
