South of the Border Casserole

I had most of the ingredients on hand for the South of the Border Casserole so it seemed like a good choice for Wednesday's dinner.


Unfortunately I think I just wasn't in the mood for it. For starters it took forever for the pasta to cook. I chose my new favorite pasta shape, cavatappi, since I had half a box open already and I kept having to reset my kitchen timer because every time I tested it for doneness it was still too al dente. The flavors were good, but this is more of a cool weather dish and it was in the 90s yesterday.

  1. I find it funny (for lack of a better word) that you believe this dish is a cooler weather dish. I think it's funny because I usually made it in the summertime, even tho it really is more of a comfort food on a cool night meal. For whatever reason I associate bell peppers and jalapenos with hot weather. Don't ask.

    I'm sorry this one didn't work out. I don't deviate from the shape of the pasta for that exact problem you had!

  2. You were right. I made this tonight and the temp was hovering around 59 with clouds. The dish was much better on a cooler night than in sweltering weather. Now I know.
