Chicken Fajitas and Spanish Rice

Last night I made chicken fajitas with all the fixings:

... including chicken cooked with a little lemon and lime juice (not grilled, unfortunately...SP got home too late and we're low on charcoal):

... slow-cooked peppers and onions:

... guacamole:

... shredded cheddar cheese:

... and chopped tomatoes:

I also made the Spanish rice recipe I got from Melissa:

Even though the chicken wasn't grilled, this was still a fantastic meal.

  1. Fajitas are one of our favorite meals too!

  2. I made the rice last week, also with chicken burritos. We're channeling each other. Hee.

Even better though, on Sunday I made chorizo and eggs for brunch, added the homemade beans I made with the burritos and had leftover rice on the side with avocado on top. Hm, I wonder where I got that idea. :P

(above description is also what's for dinner tonight!)

  3. Stephanie - It was really tasty!

Kmays - I don't make them nearly enough...need to take advantage of the grill while we still can.

Melissa - Hehe. I love when we do that! :) Mmmm...chorizo and eggs with beans, rice and avocado!? Yum! I have some leftover rice and I'm toying with the idea of picking up an avocado on my way home from work so I can have it with eggs for tomorrow's breakfast.

  4. Grill while we still can? What's the grill going off to college or something?

  5. I love fajitas! These look great!

  6. longhair - No, smartass. I meant that we're winding down into fall/winter and we tend to grill less during the cold months.

    MrsSchoon - Thanks!

  7. Mexican inspired food is one of our favorites and this looks wonderful! I always enjoy reading your recipes and results - can't wait to try this one!

Oh, and I tagged you in a meme since I visit your blog every day :)

  8. and we tend to grill less during the cold months.

Where I live, we can grill year round. Oh the irony that you have a grill and I don't. Dammit.

  9. Ann - Thanks! I'll check out the meme now. :)

Melissa - Such a shame! We still grill a few times in the winter, but SP hates standing out in the cold.
