Pizza Friday

This week's Pizza Friday turned into an experiment. Initially I was going to make calzones, but when I got home and opened the container of ricotta I realized I had used more then I thought in the Rigatoni Woodsman-Style. I had already mixed the ricotta with pepperoni, mushrooms and olives so I decided to spread the mixture on the dough and see how it turned out.


This was one rich pizza and a little soggy despite leaving it in the oven longer than usual. The flavors were all very good, but this was the first time in a long time that I had to eat my pizza with a fork.

  2. Priscilla - No real recipe, more like a method. I buy my pizza dough from an Italian bakery. This particular pizza had a mixture of ricotta (probably a little more than a cup) mixed with salt, pepper, diced pepperoni, diced mushrooms and sliced black olives and a little grated Pecorino cheese. If you add an egg to the ricotta mixture you get the filling for a calzone (although I always do 2 cups of ricotta for 2 calzones, hence why I ended up nixing the calzone idea). Instead I slathered the ricotta (minus the egg!) on the rolled-out pizza dough, topped it with pizza sauce (tomatoes mixed with oregano, salt and pepper and cooked until thick) and shredded mozzarella cheese.

  4. Melissa - Awww, thanks! I didn't think this one looked nearly as good as some of the others, but I'm picky like that. I can't wait for summer - daylight really provides the best light for photos and it'll stay light well past dinnertime in the summer. :)
