Fresh Angel-Hair Pasta with Bacon and Peas

Tonight's meal also came from the March 2008 issue of Everyday Food. I'm still in awe over how easy this one was to make. Fresh Angel-Hair Pasta with Bacon and Peas has just 6 ingredients (one of which is salt and pepper, which I don't consider an ingredient) yet it made a fantastic, satisfying, simple meal.


The recipe says this is their take on spaghetti carbonara, but being the carbonara aficionado that I am, I don't see how this is anything like that dish. That doesn't mean it wasn't fantastic, though. I love meals I can make with ingredients I always have on hand (pasta, bacon, frozen peas, half-and-half) that takes less than 30 minutes to put together, including prep time. I subbed one pound of dry spaghetti for the fresh angel hair, but that's the only change I made.

  1. I don't think of this as carbonara either... but it looks just wonderful.

    and hooray for c&w! :) I think when we talked about it a long time ago, you were saying you would never buy frozen green beans again (which I now wouldn't either) but I countered with the french C&W tiny whole ones. if you have to buy frozen, those would be the ones.

    p.s. I made something you made. again. the chicken bacon roulades from elise. I only have one more post (my lobster steak vday post) before I put them up. they were good!!

  2. Made this last night. Couldn't believe the spagetti (which I also used, as you did) would soak up all that half and half and still need some pasta water, but it did. Darn good. Thanks.

  3. Melissa - I don't know if they carry C&W in my regular supermarket but I'm definitely not buying the store brand anymore. I couldn't believe the difference!

    Oooh....aren't those bacon roulades amazing? I can't wait to see your post.
