Chicken Fajitas

QUESTION: What do you get when you combine grilled chicken marinated in lime juice, cilantro and garlic:


... shredded sharp and tangy cheddar cheese:


... homemade guacamole made with two beautifully ripe avocados, a dash of lemon juice, cilantro and garlic:


... soft, sweet strands of green bell pepper and Vidalia onion:


... homemade salsa with chunks of grape tomatoes, Vidalia onion, cilantro and lemon juice:


... and a dab of tart and tangy sour cream all layered together on a warm, soft, lightly singed flour tortilla:


ANSWER: One of the best batches of chicken fajitas I've made to date.

  3. oh, no way. that's what I made last night. haha. I didn't make the grilled peppers and onions though so I guess they weren't fajitas, but just plain burritos. :)

    hubby doesn't like avocados either, so I don't typically make guacamole., but oh I love it. he's such a freak. ;)

    and no, no pictures again. I never think of it!

  4. Sheila - Hi! I don't really have a recipe, I just make them. Here's what I do:

    Chicken - marinate chicken breasts in lemon juice, olive oil, chopped cilantro, minced garlic, salt and pepper for at least an hour but no more than 3 hours. Grill until done and slice into thin strips.

    Guacamole - Cut avocados in half and remove flesh in one piece using a spoon. Chop into large chunks and add to a bowl with pepper, cilantro and lemon juice. Make a garlic paste using minced garlic and salt, crushing it with the flat side of a knife. Add to avocados and mash together until chunky. Adjust seasonings to taste.

    Salsa - Chop tomatoes (last night I used grape tomatoes) into small pieces and mix with finely chopped onion (white or red, whichever you have on hand), cilantro and lemon juice. Season to taste with salt and pepper.

    Alosha - How can the man not like avocado?? He's insane. :P

  5. you know what I find so amusing - he's of mexican descent, but doesn't like things really spicy (I say bring it on!), doesn't like avocados and doesn't like cheese - CHEESE. ok, to be fair, he likes cooked cheese, like in italian food, or when I cook it *into* the mexican dishes, he just won't eat it by itself.

    who doesn't like cheese??? :P

  7. Alosha - LOL! That's hilarious that he's Mexican but doesn't like spicy foods, avocados or cheese - the cornerstones of any good Mexican meal. :)

    And yes, garlic paste is a great idea for when you don't want huge chunks of garlic but you still want that fantastic garlic flavor.
